Great for the holidays.<\/p>\n<p>3 cups flour<\/p>\n<p>2 \u00bd tsp ginger<\/p>\n<p>2 tsp baking soda<\/p>\n<p>3 tsp cinnamon<\/p>\n<p>1 tsp ground cloves<\/p>\n<p>\u00bd tsp salt<\/p>\n<p>2 sticks butter<\/p>\n<p>1 cup packed light brown sugar<\/p>\n<p>\u00bd cup packed dark brown sugar<\/p>\n<p>1\/3 cup mild molasses<\/p>\n<p>1 large egg<\/p>\n<p>1 \u00bd teaspoon real vanilla extract<\/p>\n<p>1 8 oz package toffee chips<\/p>\n<p>organic cane sugar, or other coarse-grain white sugar<\/p>\n<p>Oven 350 degrees<\/p>\n<p>Sift together all dry ingredients in a large bowl: flour, ginger, baking soda, cinnamon, cloves, salt. Set aside.<\/p>\n<p>Cream softened butter, brown sugar, molasses, vanilla, gently fold in egg.<\/p>\n<p>Add creamed butter sugar mixture to dry ingredients, mix thoroughly.\u00a0 Pour in toffee chips and mix well.<\/p>\n<p>Chill dough for fifteen minutes while oven preheats.<\/p>\n<p>Form dough into balls, approximately 1 tablespoon. Roll balls in the coarse white sugar until well coated.\u00a0 Place on ungreased cookie sheets, and bake 11 minutes.<\/p>\n<p>Cool on cookie sheets for two minutes, remove to wire rack and cool completely.\u00a0 Makes about 6 dozen cookies.<\/p>\n<p>Tips: Between batches, rinse cookie sheets with water and dry so sheets are completely cool before using for next batch.\u00a0 Place dough in refrigerator between batches to keep cookies from spreading too much during baking.
